The scientific freeze dryer from Harvest Right is the perfect addition to any laboratory. The scientific freeze dryer can be fully customised with your favourite processes. Multiple manageable profiles are available, each of which offers the possibility of automatically switching the condensation unit and oil-free vacuum pump on and off in combination with ascending and controlled temperature and time settings.
Freeze-drying, dehydration or cryo-drying, is a dehydration process generally used to preserve a perishable food or make the material more convenient for transport.
Freeze-drying works by freezing the material and then reducing the surrounding pressure to allow the water frozen in the material to sublimate directly from the solid phase to the gas phase, without passing through the liquid state. To speed up the process, freeze-sublimation cycles are used whereby practically all the free water contained in the original product can be removed, but preserving the molecular structure of the freeze-dried substance.
This technique is mainly used in the food and pharmaceutical industry for the preservation of food and drugs. It is an expensive technique compared to traditional drying methods, but results in higher quality products, as it completely preserves all the nutritional and organoleptic characteristics of the original product (aroma, flavour and medicinal properties).
For cryo-drying up to 4.5 kilos of material per cycle.
PROCESS
1. Products are placed in the freeze-dryer and frozen at -40 °C.
2. Once frozen, the freeze dryer creates a vacuum around the product and the ice turns to steam and evaporates (vacuum pump included).
3. The freeze-dried product must be placed in an aluminised container or storage bag with an oxygen absorber (such as Air Out Oxigen) to ensure freshness until the day you wish to consume it.
Main features and benefits
Convenience of the 4-tray dryer in a tabletop unit.
Large capacity: able to freeze up to a gallon or two of material (6 to 10 lbs if wet).
Colour touch-screen display.
4 litre ice condensing capacity. Operation allows recipe customisation (up to 10 heat treatments and 12 drying steps).
Freezing rate control. This means that the freezing rate can be accelerated or slowed down. Control of the final freezing temperature.
Control of how long a material remains at the maximum freezing temperature before the start of the drying cycle.
Control of shelf temperature during the dry cycle. This includes setting as many as five different shelf temperatures, allowing the material to dry in stages, at different temperatures. For example, you could have the material start drying at 10ºF and increase the temperature in stages until the final dry temperature is 70ºF.
The shelf heaters can be set to automatically control the sublimation speed during the primary drying cycle. Through this process, the unit has control over the relative vacuum pressure. The system records and maintains a log of pressure and temperature during all parts of the freeze-drying cycle. It provides a continuous, real-time display of pressure and temperature. The unit can also connect and communicate dryer cycle data to a nearby PC via an Ethernet cable. the unit has control of the relevant vacuum pressure.
